چکیده

ß -carotene is a human nutrient found in plants or animals. It is also can be synthesized chemically. It is lipid-soluble, and is yellow, orange or red in color. ß-Carotene can be cleaved into vitamin A in vivo. The most abundant form of ß-carotene in human serum is trans isomer; cis isomers such as 9-cis ß-carotene, 13-cis ß-carotene, and 15-cis ß-carotene are only present in trace amounts. ß-carotene is a versatile antioxidant: it prevents both singlet oxygenand free radical-mediated damage. It is believed to exert its antioxidant function at low oxygen tension. The chemical and physical mechanisms to scavenge reactive species have been proposed in a number of papers. The structure, metabolism, and possible mechanisms to scavenge reactive oxygen species are briefly reviewed in this paper. Jianfang Hu β-carotene 3

Dietary antioxidants and risk of Parkinson's disease in two population‐based cohorts

BACKGROUND A neuroprotective effect of dietary antioxidants on Parkinson's disease (PD) risk has been suggested, but epidemiological evidence is limited. OBJECTIVES To examine the associations between intake of dietary antioxidant vitamins and total antioxidant capacity and risk of PD. METHODS We prospectively assessed the relationships of dietary antioxidant vitamins C and E, ß-carotene, a...

Beta-carotene: an Essential Nutrient for Horses?

Beta-carotene (ß-carotene) is one of many carotenoids found in nature. In the human nutrition field, evidence suggests that higher blood levels of ß-carotene as well as other carotenoids such as alpha-carotene, lycopene, lutein, zeaxanthin, and ß-cryptoxanthin may be associated with lower risk of several chronic diseases. ß-carotene, a-carotene, and ß-cryptoxanthin have pro-vitamin A activity, ...

Carotenoids, total polyphenols and antioxidant activity of grapes (Vitis vinifera) cultivated in organic and conventional systems

BACKGROUND Organic agriculture involve plants which are cultivated without using synthetic pesticides, herbicides or fertilizers and promotes biodiversity, biological cycles and improve the product quality. The carotenoids, total polyphenols and the antioxidant activity from skins of some wine and table grapes cultivated in organic and conventional agriculture were studied. RESULTS The main c...

Biologically Active Polymers from Spontaneous Carotenoid Oxidation: A New Frontier in Carotenoid Activity

In animals carotenoids show biological activity unrelated to vitamin A that has been considered to arise directly from the behavior of the parent compound, particularly as an antioxidant. However, the very property that confers antioxidant activity on some carotenoids in plants also confers susceptibility to oxidative transformation. As an alternative, it has been suggested that carotenoid oxid...
